White and Butterscotch Chip Cookies

I seem to be on a cookie jag lately. Cookies are a fairly easy dessert to make and take to get togethers and picnics and seem to be enjoyed by everyone. I saw these on Pinterest and just had to give them a try. The recipe was from Jamielyn at I Heart Nap Time and they turned out every bit as good as she said they would, and that I hoped they would. These cookies have less sugar than some cookie recipes, are soft and the butterscotch and white chips give them a great and very butterscotch flavor. Give them a try, I really think that you will like them.


  • 1 cup brown sugar (you can use half brown and half white sugar)
  • 1/2 cup white sugar (I found this to much so don’t add to mine)
  • 1/2 cup butter, softened
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3 cups flour
  • 1/2 bag white chips
  • 1/2 bag butterscotch chips


Preheat oven to 350 degrees.

In a large mixing bowl cream together the butter and sugar. Beat in one egg at a time. Mix in oil, vanilla and almond extracts.

Mix dry ingredients in a separate bowl. Slowly mix into the wet ingredients. Once smooth, fold in the chips.

Bake for 6 to 10 minutes or until you see the bottom edge of the cookie turning a little golden brown. I found that they were better if they weren’t overbaked and they only too 6 to 7 minutes in my oven.
